In his 3rd article for the series, Matt Mecham passes a tried and tested Primal Pancake recipe for us to embrace our sweet tooth this week…
It’s that time of year again where, through some semi-remembered religious association, we make pancakes. If you’re eating primal/paleo then you don’t have to miss out on this event as there are plenty of great primal pancake recipes to make that are very simple. It’s quite interesting to note that Shrove Tuesday is associated with pancakes because it’s the day before lent so you’d typically use up all the “sweet” stuff in your house before fasting and eating plainer foods. We primal eaters don’t need a religious holiday to remind us to eat better!
Here’s one of my favourite recipes to get your teeth into.
Primal Pancakes – makes 5-6 generously sized pancakes
1/4 cup coconut flour (or almond flour/ground almonds)
4 eggs
Dash coconut milk
1/4 tsp cinnamon
1/4 tsp nutmeg
Optional:
1/4 tsp baking soda
Tablespoon honey
* Mix all the ingredients up and whisk. If you have a blender then use that to make a really smooth batter.
* Heat some coconut oil up in a medium frying pan
* Pour in a good dollop of the batter
* Cook for a minute or so on each side. They cook pretty fast.
Serve plain or with berries. I made some sauce by mixing a few tablespoons of 100% cocoa powder with a dollop of heavy (double) cream.
