spent 5 mins looking in to why this was nessesary
seems like (unless you eat a lot of bacon) you are not really going to make a lot of difference as nitrates are found in plants (celery), most other pork products (ham especially) and even water.

Found a tip to offset the nitrate damage though - have a glass of orange juice with your bacon... classically told by a clearly overweight bloke.

for me there are bigger things to worry about than this. each to their own though..
